Abstract

Knowing when and how to perform process validations is essential for meeting regulatory requirements and protecting consumers. Validation is required when there is insufficient data to prove that a processing method meets food safety standards, which often occurs with new technologies, product formulations, equipment, or process changes. Manufacturers usually work with a qualified Process Authority to develop a product-specific schedule process and provide documentation for compliance. In some cases, peer-reviewed literature and established guidelines may be used, but only if they are directly applicable. When no relevant data exist, challenge studies must be conducted. In these studies, the target pathogen is intentionally added at high levels to the product in controlled conditions, and the process must achieve the federally mandated reduction (typically 5-log) to be considered validated and safe for commercial use. Results are specific to the tested product, formulation, and processing conditions.
