Abstract

This report is a synthesis of the 2025 Climate Week NYC session called “Sips of Sustainability: Tackling Climate Costs from Farm to Table,” part of the annual Sustainability in Travel, Tourism, and Hospitality Roundtable organized and hosted by Cornell University’s Center for Hospitality Research and the Center for Sustainable Global Enterprise. This session revealed how deeply climate change is reshaping beverage production.
