Abstract

The CiderSure UV unit is an alternative to heat pasteurization for reducing harmful microorganisms in apple cider, and its proper function must be regularly validated to ensure compliance with New York State regulations. Validation—performed using a harmless strain of E. coli (25922)—confirms the system achieves the required 5-log microbial reduction for safe cider production. Tube performance checks are scheduled every three years for units under eight years old and annually for older units, as mandated by the Department of Agriculture and Markets. Timely validation, ideally before June, prevents operational delays during cider season. Common validation failures stem from dirty UV tubes and inadequate cleaning practices. Best practices for maintenance include flushing the unit with clean water after each use, filtering juice with a 100–150 micron filter before processing, and using manufacturer-recommended non-abrasive sanitizers. Effective validation and maintenance support both regulatory compliance and consistent product safety for cider producers.
