Abstract

The use of digital analysis tools in food safety has increased as automated data collection, digital recordkeeping, and use of generative artificial intelligence (GenAI) have become more common in the food industry. However, the adoption of these tools has not been uniform. Many small and medium-sized manufacturers still have limited access to affordable tools to help use their food safety data to make informed operational decisions. Through an Extension Outreach Assistantship, free-to-use digital food safety were developed to help these manufacturers utilize statistical process control, machine learning, and GenAI. The tools developed included a sanitizer dilution guide that generates instructions for sanitizer mixing, testing, and use by cross-referencing the selected active ingredient and target use concentration against 21 CFR § 178.1010; a sanitation statistical process control dashboard for tracking hygiene data and generating facility-specific thresholds; and a custom food safety large language model to support food safety document development. These tools were disseminated through extension workshops on sanitation practices for apple packhouses and the ethical use of artificial intelligence in food safety document development. The workshops reached 43 attendees for apple packhouse sanitation programming and 51 attendees for ethical AI programming. In addition, one pilot facility implemented the sanitation statistical process control dashboard for sanitation monitoring using adenosine-triphosphate data as a hygiene indicator. This project strengthened Cornell Cooperative Extension’s capacity to support data-driven food safety and created resources that will continue to be shared with industry audiences in future workshops.
