Abstract

Ultraviolet (UV) processing offers a nonthermal method to reduce harmful microorganisms in beverages while preserving sensory quality. In the United States, the CiderSure UV unit has been validated for apple cider production and is widely used to meet safety requirements. Proper functioning of the unit is confirmed through tube validation, a critical step in Hazard Analysis Critical Control Point (HACCP) verification, ensuring compliance with the 5 log microbial reduction standard mandated by the New York State Department of Agriculture and Markets and the U.S. Food and Drug Administration. Tube validation is performed every three years for units under eight years old and annually for older units, using a nonpathogenic E. coli strain (25922) to verify efficacy. For beverages other than cider, pathogen validation, distinct from tube validation, is required to address product specific safety concerns. This process involves inoculating the beverage with relevant pathogens such as E. coli, Salmonella enterica and Listeria monocytogenes and then processing through the UV unit to confirm greater than 5 log reduction. These validations are essential for regulatory compliance and for ensuring the safety of both cider and other UV treated beverages.
